Peru Meets Portugal: A Pop-Up Worth Travelling For

There's a particular kind of evening that only happens in the Algarve in summer. The light softens, the heat eases off the whitewashed streets of Tavira, and dinner becomes the whole point of the day. This season, we're giving you a very good reason to linger at the table.

For the length of the summer, style den Hospedaria becomes home to Pop-Up Peruano: a Peruvian kitchen with a Portuguese accent, run by Chef Miguel Hernandez. The setting helps. Hospedaria and its sister Guesthouse Pensão Agrícola sit just outside Tavira, sandwiched between the coast, with its long ribbon of beaches, and the open rural fields behind, close enough to feel the sea air, far enough to hear the countryside.

The Chef

Miguel is Peruvian by training and Portuguese by instinct, and his cooking lives in the space between the two. Peruvian ceviche technique meets Algarvian seafood; Nikkei precision meets the shellfish of the Ria Formosa; leche de tigre and bolo do caco turn up in the same sentence. It's confident, unfussy food that knows exactly where it comes from, two coastlines, one plate.

The menu is set and complete, thoughtfully adapted to allergies and dietary needs, with vegetarian alternatives on request. Nothing showy, nothing wasted: just precise, generous cooking rooted in both Portuguese terroir and Peruvian heritage.

On the Plate

The set menu changes across the week, so no two visits taste quite the same. A sense of what's been coming out of the kitchen:

  • Ceviche do Algarve: the classic, made local
  • Caldo Chilcano de marisco com favas: seafood and broad bean Chicano broth
  • Arroz de Pato Luso-Peruano: duck confit rice, Peru meets Portugal in a single pan
  • Polvo com Hummus e Olivar: octopus with hummus and olive
  • Crudo de Atum com Leite de Tigre e Chili Amarelo: tuna crudo with tigermilk and yellow chilli
  • Peixe do Dia Nikkei: fish of the day, Nikkei style
  • Fideuá de mariscos da Ria Formosa: local seafood fideuá
  • Sopa Fria de Melancia: chilled watermelon soup, made for warm nights

To finish: Pavlova de Amêndoa e Laranja, Panacotta de Figos, or Coscorões with dulce de leche and figs.

At the Bar

The drinks list follows the same logic, Peru and Portugal in the same glass: Agrícola Sour: bourbon, Campari, vermouth, grapefruit, egg white, Passion Fruit Mezcalita: mezcal, bourbon, passion fruit, Orange Algarve: vodka, Campari, citrus, Pensão Gin Mule: Tanqueray, infused dry vermouth, fig brandy, local honey.

Alongside, a short list of local Algarve wines: whites, rosés, and a colheita selecionada red.

The Details

Pop-Up Peruano runs through the end of September / early October. You don't have to be staying at either of the guesthouses (but seriously, you should be – they are gorgeous) to join: while our guests have the shortest walk to the table, we're open as a restaurant to everyone. Reservations recommended.
