David’s culinary odyssey began at the Estoril Hotel and Tourism School, setting the stage for a career defined by a relentless pursuit of excellence. As the former right-hand to Chef José Avillez for over a decade at the acclaimed Belcanto, he played a pivotal role in the restaurant’s rise to fame, contributing to its first Michelin star in 2012 and a second in 2014. His role extended far beyond the kitchen; he managed daily operations, staff training, and the creative direction of the entire José Avillez Group portfolio.
His portfolio reads like a who’s who of global haute cuisine: from the three-Michelin-starred kitchens of Quique Dacosta, Celler Can Roca (3 Michelin stars), and Le Bristol Paris in 2008 (3 Michelin stars), to the avant-garde creations of Mugaritz (2 Michelin stars) and Viajante in London (1 Michelin star) in 2014. These experiences shaped his technique, honed his palate, and deepened his appreciation for the subtle art of blending tradition with innovation.
“Since I was a child, I have always loved cooking and being in the kitchen. It was my parents and my family's kitchens that encouraged and awakened my love for cooking. For me, the kitchen symbolises love and comfort. It has been quite the journey since 1995, with still much to discover, learn and explore: it is fascinating to travel and be able to feel, observe and understand the essence of each cuisine and the differences and influences of each culture. Proudly Portuguese and a cook, I feel honoured and proud to dedicate myself to promoting Portuguese gastronomy and contributing to making Portugal a gastronomic destination of excellence.” – says David Jesus.
At MAPA, David embarks on a new culinary journey that embraces the soul of the Alentejo region while crafting a narrative that extends beyond borders. His cuisine is a dialogue—a celebration of cultural intersections and shared histories, drawing on memories from his travels and the essence of Portuguese heritage. Some of the seasonal menu highlights include: Algarve Coast Shrimp (matapa – peanuts – coconut) inspired by Mozambique, 1498, Azorean Tuna (miso – tempura – pickled seaweed) homage to Japan, Setubal Red Mullet( xerem – cockles) celebrating Brazilian Moqueca flavours, or a Suckling pig Indian roast flavours (smoked eggplant – sour red onion).
David’s approach at MAPA is both rooted in the land and inspired by the world. He sources the finest local ingredients—organic produce from Alentejo’s fertile soil, grass-fed meats, and the freshest seafood from the port of Setúbal—while weaving in influences and techniques from his global stints. His plates become culinary maps, guiding diners through a journey of flavours, textures, and emotions.
The setting at MAPA enhances this sensory journey. Bathed in the soft glow of Tom Dixon’s iconic Void lamps, the space mirrors the chef’s vision: modern yet deeply connected to tradition.
