The Roca brothers of the world-renowned El Celler de Can Roca, have collaborated with The Macallan to unveil TimeSpirit, a unique culinary experience celebrating 200 years of the iconic whisky distillery. Designed by award-winning architect David Thulstrup, whose work includes Copenhagen’s Noma, the dining room at TimeSpirit merges elegance with immersion. Perched within The Macallan Estate, the space offers sweeping views of Speyside’s verdant hills, creating a seamless connection between the dining experience and the landscape. Thulstrup’s use of natural materials and clean lines mirrors The Macallan’s ethos of blending tradition with modernity.
“We’ve created a room where nature, architecture, and gastronomy intertwine,” says Thulstrup. And it’s not just about the view; the interior, inspired by the estate’s history and whisky craftsmanship, sets the stage for an unforgettable journey.

The TimeSpirit menu, inspired by a 16-course event at El Celler de Can Roca, is condensed into nine exquisite dishes.
